Switzerland's Felchlin brings us some of the world's finest and rarest chocolate, from single-source harvesters who choose not to trade on world markets.
The prized Criollo bean produces the finest variety of cacao. Worldwide, only 10,000 pounds are harvested each year, and Chocolat Céleste has 200 of them!
Ecuador - Arriba, 72% Criollo cocoa
Coffee and liquorice fragrances, with dark currant notes, slightly bitter.
Bolivian rainforest - Cru Sauvage ("Wild Vintage"), 68% Criollo cocoa
The rare, organic wild beans are gathered via dugout canoe or on horseback, during treks of up to four days into the deep rainforest.
Notes of lemon and grapefruit, intense dried prune and vanilla, slightly bitter.
Madagascar - Grand Cru, 64% Trinitario and Criollo cocoa
Mild bouquet, roasted hazelnut aroma with a note of fresh wild berries.
Venezuela - Maracaibo Creole, 65% Criollo cocoa
Creamy, with notes of crême caramel, honey, vanilla, Bourbon and raspberry.
